Baked Stuffed Shrimp

Ingredients

1 lb large shrimp (16–20 count)

3 stacks Ritz crackers

2 sticks butter

1/4 cup chopped olives

1 (8 oz) can minced clams, drained (reserve juice)

1/4 cup imitation seafood flakes, chopped

1 whole lemon

Preparation

1) Preheat oven to 350°F.

2) Boil shrimp about 2 minutes until pink (do not overcook). Set aside to cool.

3) Crush Ritz crackers in a medium bowl. Add minced clams, chopped olives, and seafood flakes.

4) Melt 1 stick butter and add to the mixture. Gradually add clam juice until stuffing is moist but not mushy.

5) Peel shells off shrimp, leaving tails intact.

6) In 4 oven-safe bowls, melt 1/4 stick butter in each, add garlic powder, then place 5 shrimp in each bowl. Top with stuffing.

7) Place bowls on a cookie sheet and bake for about 7 minutes until tops are toasted.

8) Serve hot with lemon wedges.
