Ingredients

1 roast beef (any size)


Preparation

1) Place roast beef in a pan, fat side up. Do not add water.

2) Roast at 500°F for 15 minutes to sear.

3) Reduce oven temperature to 350°F and cook to desired doneness:

- Rare: 28–30 minutes per lb

- Medium: 35 minutes per lb

- Well Done: 38–40 minutes per lb

4) Remove from oven and let rest 15–30 minutes before carving.
