Ingredients
Potato Shell:
2 1/2 c. hot mashed potato (milk or butter added),
1/2 c. shredded cheddar cheese,
1 can (2.8 oz) french fried onions,
2 Tbsp parsley.
Filling:
1 1/2 c. shredded or cubed cooked chicken (or turkey),
1 pkg (or can) mixed vegetables thawed & drained,
1 can cream of chicken soup,
1/4 c. milk, 1/8 tsp dry mustard,
1/4 tsp garlic powder,
1/4 tsp pepper.
Preparation
Combine potato shell ingredients and spread over bottom and sides of a greased shallow 2-qt baking dish.
In another bowl, combine filling ingredients and pour into shell.
Bake uncovered at 375°F for 40 minutes.
Let stand 5 minutes before serving
. Makes 6–8 servings.
