About the Recipe

Ingredients

2 cans chickpeas, drained

2 cups diced vegetables (peppers, carrots, tomatoes, scallions, celery, etc.)

1/2 English cucumber, diced

1/2 cup pickled red onions

1/2 cup chopped fresh parsley

1/4 cup chopped fresh dill

1/4 cup chopped fresh mint (optional)

1 tsp salt and black pepper

Olive oil (to taste)

Fresh lemon juice (to taste)

Preparation

1) In a small bowl, whisk together olive oil, lemon juice, herbs, salt, and pepper.

2) In a large mixing bowl, combine chickpeas, vegetables, cucumber, and pickled onions.

3) Pour the dressing over the salad and toss gently.

4) Let marinate for a while in the refrigerator.

5) Chill before serving.
