About the Recipe

Ingredients

3 eggs; 2 cups sugar; 1 cup oil; 3 cups flour; 1 tsp salt; 1 tsp cinnamon; 1 tsp baking powder; 1 tsp baking soda; 2 tsp vanilla extract (seeds removed); 3 cups grated zucchini; ½ cup chopped nuts (optional); ½ cup raisins (optional)

Preparation

  1. Blend eggs and sugar.

  2. Add oil and mix well.

  3. Combine dry ingredients and add to creamed mixture.

  4. Stir in zucchini, nuts, and raisins.

  5. Pour into a greased and floured 9x12 inch baking pan.

  6. Bake at 325°F for 1 hour and 15 minutes.
