Ingredients
2 seedless cucumbers, halved lengthwise and thinly sliced
2 cups fresh blueberries
½ cup white balsamic vinaigrette
3 tbsp sliced fresh mint leaves
1 cup crumbled feta cheese
Preparation
1. Combine all ingredients in a large bowl.
2. Toss gently to mix.
3. Serve immediately or chill until ready.
*Note: Regular balsamic vinaigrette works as a substitute, but it gives the salad a reddish tint.*
