Ingredients
1½ lbs hamburger, ½ cup bread crumbs, 2 beaten eggs, ¼ cup milk, 2 Tbsp grated cheese, 2 carrots, ½ tsp Italian seasoning, ½ tsp onion powder, Fresh or dried basil to taste, 6 oz can tomato paste, 1 cup water, 1 cube beef bouillon, 1 (10 oz) bag Italian frozen vegetables (or fresh veggies like carrots, zucchini, yellow squash), ½ tsp garlic powder
Preparation
1. Combine beef, bread crumbs, eggs, milk, and grated cheese. Form into 2-inch meatballs.
2. Slice carrots and place in the bottom of a crockpot. Add frozen or partially cooked fresh veggies.
3. Place meatballs on top.
4. Combine tomato paste with water and bouillon. Add spices.
5. Pour mixture over meatballs.
6. Cook on low for 4–6 hours.
7. Optional: Add cubed potatoes.
