Lentil Soup

About the Recipe

Ingredients

1 lb dry lentils

2 tbsp coarse salt

Diced onion

Bell pepper

Carrot

Celery

Garlic

Oregano

Red pepper flakes

Tomatoes

Baking soda

4.5 cups stock or water

Spinach

Optional: rice, cornbread, noodles, or cooked chicken

Preparation

1. Brine lentils for 1 hour with salt.

2. Sauté onion, bell pepper, carrot, celery, garlic, spices, and baking soda.

3. Add lentils and stock.

4. Add tomatoes and bring to boil.

5. Stir in spinach near the end.

6. Simmer covered for 50 minutes.

7. Serve with rice or cornbread. Optional: add noodles or chicken.
