Ingredients
Chicken Thighs:
- 4 bone-in, skin-on chicken thighs
- 2 tbsp butter (melted)
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and black pepper to taste
Vegetables:
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 tbsp olive oil or butter
- Salt and pepper to taste
Side:
- 1 cup brown rice
- 2 cups water or broth
- Salt to taste
Preparation
1. Preheat oven to 400°F (200°C).
2. Mix melted butter, garlic, thyme, salt, and pepper. Brush over chicken thighs.
3. Place chicken in baking dish and bake 35–40 min or until internal temp is 165°F.
4. Cook brown rice according to package (1 cup rice in 2 cups water, simmer ~40 min).
5. Sauté zucchini and squash in oil over medium heat, season, and cook until golden.
6. Serve chicken with vegetables and brown rice.
