Ingredients
2–3 lbs potatoes (cut up, no need to peel)
Oil or mayonnaise (to coat)
Salt and pepper, to taste
Paprika, to taste
1 green pepper, chopped (optional)
1 onion, chopped
Garlic, chopped (optional)
Preparation
1) Preheat oven to 425°F.
2) Cut potatoes; coat with oil or mayo. Season with salt, pepper, and paprika.
3) Add peppers, onion, and garlic; toss to coat.
4) Spread on a baking sheet.
5) Bake 30–40 minutes, tossing halfway, until crispy and tender.
