Quick Crust ‘n Quiche

About the Recipe

A versatile quiche recipe with make-ahead tips. Submitted by Christin Cruz.

Ingredients

Crust:

1⅓ cups AP flour

1 tsp kosher salt

2 tsp dry herbs

⅓ cup oil

3 tbsp buttermilk


Filling:

1 cup shredded cheese

8 oz cooked meat

Custard: 4 eggs, 2 yolks, 1⅓ cups buttermilk, salt, pepper, cloves/nutmeg

Preparation

1. Mix crust ingredients, press and roll out.

2. Blind bake at 400°F for 5–6 minutes.

3. Add cheese and meat.

4. Pour in custard.

5. Bake at 375°F for 32–35 minutes until set.

6. Cool and serve. Can be frozen before or after baking.
