Ingredients
Nonstick cooking spray; Salt and black pepper; 1 lb thin spaghetti; 1 lb ground beef (85% lean); 1 tbsp olive oil; 1 medium white onion, chopped; 2 cups spaghetti sauce; 1/2 cup ricotta cheese; 2 tbsp parsley; 3 large eggs; 1/2 cup + 2 tbsp Parmesan cheese; 1 cup mozzarella cheese
Preparation
1. Preheat oven to 350°F. Grease a 9x3-inch pan with cooking spray.
2. Bring a large pot of salted water to boil. Cook spaghetti 3–4 minutes less than package directions, then drain.
3. Brown ground beef in a skillet with salt and pepper. Add onions and cook until tender. Drain.
4. In a bowl, whisk together sauce, ricotta, eggs, parsley, and 1/2 cup Parmesan. Season with salt and pepper. Stir in spaghetti, beef, and onions. Transfer to greased pan.
5. Top with mozzarella and remaining Parmesan. Bake until golden and set, 30–40 minutes.
