Ingredients
16 oz kielbasa; 1/2 bell pepper, cut into chunks; 1/2 onion, cut into chunks; 8 oz pineapple tidbits or chunks; 1/2 cup white sugar; 1 tbsp brown sugar; 1/4 cup ketchup; 1/4 cup vinegar; 1 tbsp soy sauce; 1/2 tsp garlic powder;
Homemade Coleslaw Dressing
1/2 cup mayonnaise; 2 tbsp white sugar (or to taste); 1 1/2 tbsp lemon juice; 1 tbsp vinegar; 1/2 tsp ground black pepper (or to taste); 1/4 tsp salt (or to taste)
Preparation
1. Slice kielbasa into 1/2-inch wide rounds and place into a saucepan.
2. Add remaining ingredients for kielbasa and stir until combined. 3. Heat covered over low heat on the stovetop for 90 minutes, OR cook on low in a slow cooker for 2 hours.
4. Whisk together mayonnaise, sugar, lemon juice, vinegar, pepper, and salt until smooth and creamy.
5. Toss dressing with shredded cabbage or coleslaw mix.
6. Serve kielbasa hot with the prepared coleslaw on the side.
