This sweet and zesty bean salad is a favorite at gatherings. Submitted by Marybeth Hayward.

Ingredients
1 can black beans
1 can pinto beans
1 can corn
½ cup chopped red pepper
½ cup chopped red onion
½ cup vegetable oil
½ cup cider vinegar
1 cup sugar
Preparation
1. Drain and rinse the beans and corn.
2. In a large bowl, combine beans, corn, red pepper, and red onion.
3. In a small saucepan, heat the vinegar, sugar, and oil until the sugar dissolves.
4. Pour dressing over the bean mixture and stir to combine.
5. Refrigerate until cool.
6. Serve with corn chips or tortilla scoops.
