Ingredients
3 eggs; 2 cups sugar; 1 cup vegetable oil; 1 tbsp vanilla; 2 cups grated zucchini; 2 cups flour; 1 tsp baking soda; 1 tsp baking powder; 1 tbsp cinnamon; 1 tsp nutmeg; 1 cup raisins; 1 cup chopped nuts
Preparation
Beat eggs until light and fluffy.
Add sugar, then oil, and continue beating until smooth.
Add vanilla and zucchini; stir to mix.
Sift together flour, baking soda, baking powder, cinnamon, and nutmeg.
Add dry ingredients to wet mixture and combine.
Stir in raisins and nuts.
Divide batter between 2 greased 8x4-inch loaf pans. Bake at 350°F for 1 hour or until a toothpick inserted in the center comes out clean.
Remove from pans, cool on rack.
Store wrapped in refrigerator or freezer.
