Ingredients

3 eggs; 2 cups sugar; 1 cup vegetable oil; 1 tbsp vanilla; 2 cups grated zucchini; 2 cups flour; 1 tsp baking soda; 1 tsp baking powder; 1 tbsp cinnamon; 1 tsp nutmeg; 1 cup raisins; 1 cup chopped nuts

Preparation

  1. Beat eggs until light and fluffy.

  2. Add sugar, then oil, and continue beating until smooth.

  3. Add vanilla and zucchini; stir to mix.

  4. Sift together flour, baking soda, baking powder, cinnamon, and nutmeg.

  5. Add dry ingredients to wet mixture and combine.

  6. Stir in raisins and nuts.

  7. Divide batter between 2 greased 8x4-inch loaf pans. Bake at 350°F for 1 hour or until a toothpick inserted in the center comes out clean.

  8. Remove from pans, cool on rack.

  9. Store wrapped in refrigerator or freezer.
